Helston Pudding

A traditional pudding similar but lighter than Christmas Pudding that originates from Helston and is served on Flora Day.

Helston Pudding Recipe

Ingredients
2oz raisins
2oz currants
2oz suet
2oz ground rice
0.5oz candied peel
0.5tsp bicarbonate of soda
0.5tsp mixed spice (buy mixed spice)
2oz plain flour
pinch of salt
milk

Method

Chop the peel up finely. Dissolve the bicarbonate in the milk. Put all the dry ingredients into a bowl and mix together. Add the milk and bicarbonate and mix well. Pour into a well-greased basin and cover with a piece of greaseproof paper and a floured pudding cloth. Stand in a pan of boiling water and boil for about 2 hours.

Best served with Cornish Clotted Cream such as RODDA`s
